A spin on Chinese chicken salad—but more nutritious and contains beneficial CBD oil.  Anti-inflammatory salad, anyone?  The combination of salt, acid, fat, and spicy paired with the varying textures of vegetables and nuts makes a perfect salad for your lunch rotation.  Kale’s dark leafy greens give this salad added nutrients and texture.  Tamari, sesame oil, and rice vinegar are a perfect trio that make your taste buds explode as the cilantro tempers the palate.

While the CBD oil may help with ailments such as pain, insomnia, or anxiety, kale gives you a heavy dose of your daily nutrients.  Kale is a nutrient powerhouse with loads of vitamins, minerals, and antioxidants.  About 1 cup of kale is only 33 calories, contains 3 grams of protein, and 2.5 grams of fiber. Kale is rich in vitamins A, C, and K, and folate.  It’s a good source of potassium, calcium, zinc, and lutein, among many others.

:: ASIAN KALE SALAD ::

Servings: 4-6 // Total Time: 15-30 minutes

INGREDIENTS ::
1 bunch of kale, chopped (about 8 oz)
1 bunch cilantro, chopped (about 4 oz)
3 green onions, thinly sliced on the diagonal
2 carrots, shredded (about 1 1.4 cups)
½ cup roasted almonds, roughly chopped
¼ reduced-sodium tamari or soy sauce
2 tablespoons seasons rice vinegar
1 teaspoon toasted sesame oil
1 pinch of red chili flakes
1 tablespoon Jenny’s Baked at Home CBD Infused Olive Oil
Crispy wonton strips, optional

PREPARATION :: 
Toss all ingredients together in a large salad bowl. Let sit, tossing often, until slightly wilted—about 15-20 minutes. Add crispy wontons, if desired.
