Ginger and carrot are a dynamic duo.  They are both root vegetables — so there’s an interesting tidbit.  The sugar profile in carrots really comes forward after they’ve been cooked down.  Be careful not to burn (or even slightly char) the carrots because then you’ll have soup that tastes like campfire.  Ginger has this…je ne sais quoi, I guess it’s called a zing.  The spicy zing from the ginger tincture paired with the sweet and creamy carrot yields an interesting mix that’s comforting and refreshing.  The two flavors balance each other in a way that makes this soup a go-to for all seasons.

The health benefits of ginger are well-known.  Ginger has anti-inflammatory and anti-nausea properties, helps with muscle pain and muscle soreness, and aids digestion.  Some of the benefits of cannabinoids (CBD) are said to include helping with anxiety, depression, pain, and problems sleeping.

This CBD Infused Ginger Carrot soup is a triple threat—nutritious, delectable, and medicinal.  It tastes great hot or cold so it’s another multi-season soup for your repertoire.  This soup is incredibly easy to prepare but people will think you spent hours preparing it.  We won’t tell on you, it’s our secret.

:: CBD INFUSED GINGER CARROT SOUP ::

Servings: 4-6 // Total Time: 45 minutes

INGREDIENTS ::
2 tablespoons Jenny’s Baked at Home CBD Infused Coconut Oil, for sautéing
1 cup onion, diced
2 cups carrots, diced
5 cups vegetable broth
2 full droppers of Jenny’s Baked at Home Ginger tincture
Salt and pepper to taste
1 ½ teaspoons Jenny’s Baked at Home CBD Infused Coconut Oil, to top each bowl before serving

PREPARATION ::
In medium skillet, add 2 tablespoons CBD infused coconut oil and onion.  Cook onion until almost translucent.  Add carrots and cook on low to medium heat, until tender, about 20-25 minutes.  Stir often to avoid burning carrots and onions.  Add broth and bring to a boil.  Add salt and pepper to taste.  Remove and let cool for a few minutes.  Pour mixture into blender, add 2 full droppers of CBD infused ginger tincture.  Blend until smooth.  Pour into bowls, add salt and pepper to taste.  Top with ¼ teaspoon CBD infused coconut oil. Enjoy!
