Did you know there are hundreds of types of sweet potato?  Japanese sweet potatoes are becoming more popular and accessible in supermarkets.  They tend to be nutty, creamy, and have a slight toasted flavor.  It is great for this recipe, but any type of sweet potato is perfectly fine here.  Roasted sweet potato is the perfect food.  It’s warm, slightly sweet, creamy, crispy on the outside, and soft on inside.  Sounds like heaven, right?

:: ROASTED SWEET POTATOES ::

Servings: 4-6 // Total Time: 35-45 minutes

INGREDIENTS ::
3 pounds sweet potatoes, cut into 1 ½ inch pieces
1/4 cup Jenny’s Baked at Home CBD infused Olive Oil
2 teaspoons kosher salt
½ teaspoon freshly ground black pepper

PREPARATION :: 
Preheat oven to 350-375 degrees Fahrenheit. Toss potatoes with CBD infused olive oil, salt, and pepper on a rimmed baking sheet. Roast until tender and slightly browned, stirring occasionally, about 35-45 minutes.
