If you haven’t had coconut lime rice, you’re in for a treat.  Coconut rice is popular in Southeast Asian cuisine.  Lime and cilantro are a bright twist to the traditional dish.  It’s creamy, slightly sweet, and fragrant.  Coconut milk and CBD coconut oil are somewhat fruity and creamy.  Jasmine rice and lime are fragrant and balance out the richness from the coconut components.  Vegetable broth, my little secret, add the perfect amount of salty and savory.  The CBD coconut oil makes this dish incredibly satisfying and an excellent way to incorporate your daily dose of full-spectrum hemp oil.

Coconut lime rice is warm, cozy, and creamy–– a deeply satisfying venture.  It’s perfect for cooler weather. Basmati rice, or glutinous rice, could be substituted for jasmine rice.  But, if possible, stop at the store to pick up some jasmine rice.  Its floral notes amplify this recipe tenfold.  This recipe is a perfect pairing for a Southeast Asian curry like Thai red curry or an Indonesian (or Malaysian-style) rendang.  Even an Indian curry would go great!

Servings: 3-4 // Total Time: 20 minutes

2 cups jasmine rice
2 cups organic coconut milk
2 cups vegetable broth
1/4 cup Jenny’s BAKED at home CBD-infused Coconut Oil
3 limes, juiced
1 cup chopped cilantro (coriander)

In a medium-size pot, bring coconut milk and vegetable broth to boil, add all other ingredients, cover and reduce heat, let simmer for 15 minutes, stirring once or twice while it’s simmering (don’t skip this step or the rice may burn). Serve warm with your favorite main dish. Enjoy!
